Typical dishes from the Canary Islands include wrinkled potatoes with mojo, mussels, limpets, cheese, los pejines, burgaos, steamed or in vinegar. Canarian stew, jareadas and fish consomm are some of the most delectable dishes that you can taste when you visit the island. The local gastronomy is typically mild and makes use of fresh, local ingredients. A fine example is fish seasoned with mojo.


The Recipe for Papas Arrugadas con Mojo

For lovers of food and those curious about genuine Canarian cooking, here is the secret recipe of one of the typical dishes of the islands, papas arrugadas con mojo.

If you want to make delicious papas arrugadas con mojo at home, you will need 2 kilograms of small potatoes, half a lemon, and four or five handfuls of salt. Clean the potatoes thoroughly to remove any earth and once cleaned, put them in a saucepan and cover entirely with water. Add the lemon in order to get the white color distinctive of these potatoes. Leave them to cook. Then you change the water, but this time you only fill half of the saucepan. Add the salt and leave them to cook until they are soft. To dry them, you must heat the potatoes without water.

In order to complete this dish, the mojo verde is necessary. Not to worry, the mojo verde is quite easy to make. Crush in a mortar two peeled garlic heads, one green pepper, a handful of coriander, cumin and salt to taste. Mash everything together and later on add oil and vinegar, little by little, until all is blended well. Now the papas arrugadas con mojo are ready to serve and enjoy!
